Burnham Dining is a cozy traditional dining hall that features the wildly popular Extreme Greens chopped salad concept in addition to all the selections on the Gold Menu.

An entrée salad customized for you! Toppings of the week rotate and include many vegan, vegetarian and gluten free options.  

Monday - Thursday 11 a.m. to 2 p.m.; 4 p.m. to 8 p.m.
Friday 11 a.m. to 2 p.m.; 4 p.m. to 7 p.m.

Step 3

Select your Protein (note: all proteins are on a rotating schedule)

Step 2

Select from 24 toppings, including the topping of the week! (Note: all toppings are on a rotating schedule)

  • Vegetables: artichoke hearts, beets, black olives, broccoli, shredded carrots, corn, cucumber, edamame, tomatoes, green peas, mushrooms, red onion, peppers, bean sprouts, fresh Pico de Gallo, olives
  • Fruit: diced apples, blueberries, grapes, mandarin oranges, pineapple tidbits, strawberries
  • Cheese:asiago, bleu cheese crumbles, cheddar, feta, Monterrey jack, mozzarella, parmesan
  • Dry toppings: almonds, Chow Mein noodles, croutons, dried cranberries, dried cherries, raisins, sunflower seeds, sundried tomatoes, tortilla strips, sliced walnuts

  • Vegan Lentils –parsnips, carrots, onion, sweet potato & fennel
  • Vegan Tabbouleh- bulgar, parsley, tomatoes, mint & lemon
  • Curried Egg & Chick Pea- garbanzo beans, egg, mayo, red pepper and celery

  • Quinoa Salad- quinoa, cranberries, & edamame
  • Salami Antipasto- Salami, sliced mozzarella, red onion, banana pepper, black olives and asparagus
  • Vegan Kamut & Roasted Onion and Apples- Kamut, apples, caramelized onion
  • Sweet & Spicy Bacon- Bacon, cayenne and brown sugar
  • Asparagus & orzo with Lemon Zest- Asparagus and Orzo
  • Vegan Sesame ginger tofu- tofu, ginger, sesame oil & seed, green onion and shredded carrots
