Cafeteria offers 'dining cruise' of North AmericaApril 5, 2005 KALAMAZOO--For a limited time only--Monday through Friday, April 11-15--the Bernhard Center Cafeteria at Western Michigan University is offering a "Dining Cruise" of North America, from Alaska to the Caribbean, with five daily luncheon specials for $5.55 each. The menu for the week includes such treats at crab-stuffed salmon, crusted lamb with rosemary demi-glaze and Veal Saltimbocco. One luncheon special will be offered between 11:15 a.m. and 1:30 p.m. each day. The Bernhard Center Cafeteria is open to the public and is located off the main-floor lobby of the center on WMU's main campus. The menu for each day follows. Monday, April 11--The cruise begins in Alaska with crab-stuffed salmon, drizzled with a lemon-wine sauce. Tuesday, April 12--Cruise south to Latin America for grilled flank steak in a a spicy cilantro garlic chili marinade, and served with chimichurri sauce--garlic, jalapenos, cilantro, parsley, oregano, white vinegar and olive oil--on the side. Wednesday, April 13--Next up is Florida for honey mustard crusted lamb served with a wine reduced rosemary mint demi-glaze. Thursday, April 14--The cruise sails into the Caribbean for tuna steak served atop lime mustard grilled pineapple slices. Wasabi sauce is available on the side for those wanting a little extra "kick in the mouth." Friday, April 15--Final stop on the cruise is the St. Johns River in Florida with a luncheon of Veal Saltimbocca--veal wrapped in prosciutto, dredged in flour, sauteed in olive oil, topped with provolone and served with red wine sauce.
