 Recipe for wellness

White Bean Chicken Chili

Serves 4

Ingredients

1 lb boneless, skinless chicken breasts
1 TB extra virgin olive oil
1 48oz jar great northern beans, drained and rinsed
1 24oz jar corn and black bean salsa
2 cups chicken broth
Garnish with 1 cup shredded cheese and 2 cups crumbled blue corn chips

Directions

Cut chicken into bite sized pieces and season with salt and pepper.
Heat oil in a large saucepot over medium-high heat. Add chicken and heat until cooked through and juices run clear.
Add in beans, salsa, and broth. Cook until heated through.
Sprinkle with cheddar and top with crumbled corn chips.
Serve and enjoy while you watch your favorite game!


Tip

To make this a dip just leave out the chicken broth. The recipe doubles and freezes well.
